Title: Senior Sous Chef

Reports To: Executive Chef

Department: Banquet and F&B Outlet Kitchens

Classification: Full Time - Salary

 

Position Summary:

The Senior Sous Chef’s primary responsibility is management of the culinary team and coordination, production, presentation and financial profitability of food served for all culinary events consistent with Resort standards.  This position works closely with the Banquet staff, F&B outlets staff and Catering & Conference Services. 

 

Responsibilities:

  • Management and development of kitchen staff including adding efficiencies, scheduling, interviewing, hiring, disciplinary action and payroll
  • Oversee food preparation from the kitchens and review best practices and techniques
  • Purchasing food items from various food vendors either online, via purchase orders, web browser or phone
  • Verify purchased items have been received and visually inspect ensuring food is acceptable quality
  • Manage inventory, food cost and budgeting
  • Maintain latest concepts and trends in Resort dining
  • Must be able to be on your feet through an entire shift daily
  • Clearly and timely communicate with other departments in a friendly and professional manner
  • Other duties as required

 

Minimum Job Requirements:

  • 5+ years with Resort experience as Banquet Chef, Chef de Cuisine or Sous Chef
  • Strong communication skills in English, both written and verbal
  • Proficient in Excel and experienced with food inventory/costing software
  • Ability to work in a multi-tasking, fast paced environment
  • Possess up to date knowledge of health codes
  • Demonstrated strong management and development skills
  • Ability to work long days and weeks including all shifts, weekends, evenings, and holidays as needed

 

These responsibilities must be able to be performed with or without reasonable accommodations.  While performing the duties of this job the employee must be able to stand continuously to perform essential job functions throughout the entire shift. May require walking primarily on a level surface for the majority of each shift. Requires interacting with others, interpreting spoken messages, constant keyboarding, standing, hearing and talking. The employee will stand and walk daily, and frequent bending at the waist, twisting of the upper body, kneeling, being mobile on even surfaces, squeezing and crouching are also required. Requires frequent lifting and carrying of 1-50 pounds.
