The Sous Chef will use his/her creativity and leadership skills to join our Executive Chef and a dynamic Food and Beverage team to enhance our dining experience. Assist in the opening of a new outlet that focuses on wood fired pizzas and small plates.  Help oversee a kitchen that produces food for multiple outlets in the resort. 

Job Duties:

  • Supervise all facets related to our kitchen and food operation
  • Skilled in food preparation and ability to work all stations on the line (breakfast, lunch, dinner, room service)
  • Participate in menu development- creative, delicious and fresh, incorporating locally grown ingredients, recipe consistency and portion control
  • Recruit, train and schedule of kitchen staff, proper control of labor and overtime
  • Ensure maintenance of kitchen organization and sanitation standards, follow all health codes
  • Conduct purchasing and cost control to maintain a profitable operation in line with budgetary standards, perform monthly inventories
  • Work closely with vendors to ensure best pricing and maximize special promotions
  • Deal with clients, greet guests, promote high customer service standards
  • Participate in daily/ weekly management meetings in order to ensure smooth and seamless operations
  • Report directly to Executive Chef

Job Requirements:

  • 5 years of Restaurant/Hotel Experience
  • Flexibility in schedule, ability to work all major holidays
  • Outgoing personality/ strong customer service skills
  • Ability to train, lead and inspire a team and work in a fast-paced environment
  • Experience in all stations on the line (breakfast, lunch, dinner, room service)
  • Knowledge and implementation of correct portions, recipe costing, efficient scheduling, expense control
  • Strong knowledge or health codes, HR standards
  • Flexibility to respond to a range of different work situations and ability to multi-task and work in an environment with shifting needs
  • Creative presentation for individual plates, food displays, on trend
  • Proactive, punctual, calm and professional demeanor
  • Organized, orderly and excellent attention to detail
  • Positive communication skills and team spirited individual
  • Food handlers card
  • Able to stand/ walk for long periods of time and go up and down the stairs as needed, able to lift up to 50 lbs as needed
  • Excellent References required and subject to background check

May require walking primarily on a level surface for the majority of each shift. Requires interacting with others, interpreting spoken messages, constant keyboarding, standing, hearing and talking. The employee will stand and walk daily, and frequent bending at the waist, twisting of the upper body, kneeling, being mobile on even surfaces, squeezing and crouching are also required. Requires frequent lifting and carrying of 1-50 pounds.
